Ill Health Holding Me Back

I am looking for a part time job after being out of work for health reasons, since I graduated in June 2006. My dilemna is that because since getting a degree my health has been too bad for me to work, or get voluntary work. I have worked in various bars and customer service jobs over my degree but other than that I haven't got much 'real' working experience. However, i have very good GCSE and a level grades, and a degree.

I have always been asked about my health in interviews, which I have always been honest in answering... something along the lines of my health being a problem after graduation but that has now improved and that i feel ready to work. Also that i am looking forward to employment, keen to work hard and hopefully increase my hours in the future.

A few employers have said that they wouldn't take the application onto the next stage because it has been so long since i last worked. Other applications have been rejected and I have only been given vague reasoning. If anyone has any advice for me i would really appreciate it. I know the topic of my health will always come up and i just don't know if i am tackling it in the right way.
